Stephane Treand:

A veteran of the food industry, Stephane Treand’s pastry journey began in Northern France when his father sent him to work at the local bakery. During the hard time of apprenticeship at the bakery shop, he could attend pastry courses one week per month in a Pastry school in Vincennes, Paris. When he discovered there were so many ways to express himself within the world of “la patisserie”, he realized his passion for pastry.

Stephane has held a variety of positions at several bakeries and pastry shops in the Paris area where he learned all of the fundamental basics of French pastry and bakery. In 1989, Stephane opened his own patisserie tearoom “Patisserie Treand”, located in Brignoles in Provence, South of France. Already a food lover, he focused on the quality products that the South offered which allowed him the freedom to express his creativity.

In 1999, after training for four years, Stephane’s apprentice from his patisserie won the prestigious title of M.A.F., (Meilleur Apprenti de France), “Best Apprentice in France”. Stephane Treand was a recognizable name at many contests and demonstrations. While continuing to make a name for himself in the world of pastry, he was also a trainer at the ENSP, the national superior pastry school in Yssingeaux, France.

In 2001, Stephane sold his patisserie in order to devote more time to teaching and to pursue his lifetime dream of achieving the title of M.O.F., (Meilleur Ouvrier de France) “Best Craftman in France” which he achieved in 2004. The title of M.O.F. is the highest honor given by the President of France to a professional in an individual trade. Stephane has been invited to be a guest chef at several respected culinary institutions across the world including The Apron School, Niigata, Japan; The French Pastry School, Chicago, IL; The Notter School, Orlando, FL; The Institute of Culinary Education, New York, NY; and several culinary centers in the US, England, Scotland, Saudi Arabia, Dubai, Mexico, Hong Kong, and the Caribbean.

One of his teenage dreams was to live in the USA and in 2005 Stephane was given an opportunity to do so. He accepted a position of Executive Pastry Chef at The Four Seasons Hotel & Resort in Newport Beach, CA. The St.Regis Monarch Beach Resort in Dana Point, CA became his next destination as he held the title of Executive Pastry Chef there.

Over the past years, Stephane Treand has been very busy. In 2005 he won the Food Network’s “Sugar Daredevils Challenge” in Phoenix, AZ, in 2007 he won the gold medal at the National Pastry Team Championship (NPTC) in Nashville, TN and in 2008 he took the title of World Pastry Champion at the WPTC in Nashville, TN. Pastry Art and Design Magazine named Stephane one of the Ten Best Pastry Chefs in the USA in 2007 and 2008. In 2009, he coached the USA Team which consisted of three of his former assistants from California. The team won the bronze medal at the International Pastry Competition in Tokyo, Japan.

Stephane is currently the Executive Chef Consultant for Occitanial, a pastry shop in Tokyo where he took the challenge of creating south of France pastries with a pinch of Japanese sensitivity. He also continues to create silicon molds for his endorsed line of Showpeels which he designs for sugar and chocolate artistic work. Stephane’s ultimate dream of living in the USA and having his own school have been realized. With his superior knowledge and innovative techniques, he is dedicating his time to sharing his passion and love for the Art of Pastry.

Aiden Demarest

Aiden is part Owner of Liquid Assets, an independent consulting firm. Stemming from his desire to elevate the cocktail community, Liquid Assets provides individual classic cocktail education, spirits training and bar concept & design. Having consulted for numerous spirit brands nationwide, Aiden keeps a finger on the pulse of new trends and marketing ideas. His company has produced some of the most successful beverage programs the LA hospitality industry has seen in decades.

Brian Stewart

“Spirit Master” at Petit Ermitage , a boutique hotel in West Hollywood, where he designs the cocktail list for the Private Rooftop Club. “Cocktails are my passion… bartending is not a hobby, nor a side job, it is what I do. I love the history and the culture that goes with it all”. Brian believes that Classic Cocktails are the best way to go, and that’s where he draws a lot of his inspiration. While trying to keep new and innovative, he feels it’s important to know that no bartender is inventing the wheel behind the bar, but merely revisiting it.

Nathalie Alice

Nathalie Alice brings to West Coast ears an eclectic repertoire of French songs American and Latin classics (Edith Piaf, Serge Gainsbourg, Claude Bolling, Brigitte Bardot, Charles Aznavour, Gershwin, Irving Berlin, Cy Coleman, A.C. Jobim). The French-native guitarist and singer led a quartet featuring Jerome Sabbagh, and Thomas Bramerie.The ensemble became a regular feature for events held at the New York based Cultural Services of the French Embassy.

A versatile musician, Nathalie covers a wide array of forgotten and contemporary musical greats and surprises her audience with jazz-inspired arrangements.

Andy Favre:

Andy Favre is a self-produced French artist ranging from electro-house to pop-club music. His first album came out in July 2010 on iTunes and gives us a preview of his unique musical style. He writes, composes and performs his songs in English with an occasional use of French. He shows his multi-instrumentalist capabilities both in concert and in the studio.

Born in France in 1987, Andy Favre developed a strong interest for music and recording techniques at an early age. As a kid, he grew up listening to Jean Michel Jarre and Eric Serra’s film scores. He was fascinated by synthetisers and sound design. At eight years old, Andy took his first accordion lessons and as the teenage years came, he taught himself the guitar, the drums, the bass and the piano. His had the opportunity to perform with many local rock bands and practice his passion for recording and producing with them. At that time, he also produced instrumental tracks for various french artists and even american rapper “Cysion”.

But soon, with the rise of dance and electronica in europe, Andy started to focus on the production of an album dedicated to the genre. His music ended up playing on local radio-stations and clubs. It was also featured during the opening of David Guetta’s concert for new year’s eve in 2008, in front of thousands of people. In 2010, he performed on that same stage for Mathieu Bouthier’s opening. Only big names such as Martin Solveig, David Vendetta, Tom Snare and finally David Guetta had performed there for Fun Radio’s Fire Mix Party. Andy left his native France to study filmmaking in Los Angeles where he also produces hip-hop beats and composes music for films. Currently, he focuses on his career as a singer/producer to create club music allying french electronica and american hip-hop.

DJ Recycle (aka Nico)

Dj Recycle has been spreading his vibe in LA for the last 12 years in the coolest lounges & clubs from Hollywood to Malibu, as well as high profile private parties & events.

His eclectic style blends world music with electronic grooves and old school classics.

Brief Bio : Remixer, Producer, Dj Recycle is one of the resident Dj at the Moonshadows Blue Lounge in Malibu, California since 2001.

Past residencies: Café Des Artistes, Voda, Cinch, Linq, Tangier, Tantra Lounge, 217, Fraiche, The Little Door, Cafe Stella, Pastis, Le Carre d’As.

Growing up in a cultural Gumbo pot outside Paris, France, Evyn Charles was immersed in the sounds of the world. He played violin in a classical orchestra, bass in a Reggae band, and has never stopped singing…

Right out of high-school, he started playing music for Club Med™ resorts, starting to refine what would turn into his trademark Soulful Beach Groove style. Following in the footsteps of Van Morrison, Bob Marley and Eva Cassidy, he combines infectious party songs with heart-tugging numbers.

His prodigious repertoire covers practically every genre and era, or as he likes to describe it “I play songs that people like.” A typical performance will travel from Sinatra to Surf guitar, Kenny Chesney to Foo Fighters, with a side trip in his native French and some Irish favorites! He also has a wonderful quieter side and can provide instrumental guitar music.

Equally at home on a solo acoustic guitar, with a duo, trio or his band The NeverQuitters, he performs at venues ranging from neighborhood restaurants and country clubs to festivals as well as parties, weddings and special events.
